1 ¼ cups wheat flour
2 teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
½ cup raisins
1 cup mashed bananas
¼ cup honey
1 egg
1 tablespoon milk
1/3 cup oil
¼ teaspoon vanilla
Preheat oven to 350° F.
Combine dry ingredients and raisins in a mixing bowl.
Mash bananas and add to the liquid ingredients in another bowl.
Add liquid ingredients to dry mixture and mix gently, just until batter is smooth.
Place in muffin tins.
Bake for 18 to 20 minutes.
Yield: one dozen muffins.
