8 egg yolks
1 cup honey
8 egg whites
2 cups flour
4 teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 teaspoon vanilla
Preheat oven to 350° F.
Beat egg yolks and honey.
Beat egg whites until stiff peaks appear, then add to the yolk-honey mixture.
Stir in flour, baking powder, baking soda and vanilla.
Mix gently, just until batter is smooth.
Pour batter into two 9 x 12 inch baking pans.
Bake for about 15 minutes.
Let cool.
Invert cake onto a damp tea towel and spread with a jelly or jam of your choice.
Roll cake up in a towel and let it cool completely.
Remove carefully from towel.
Whip cream until stiff. Add honey to sweeten.
Spread whipped cream mixture over jelly roll.
