Jelly Roll

Ingredients

  • 8 egg yolks

  • 1 cup honey

  • 8 egg whites

  • 2 cups flour

  • 4 teaspoons baking powder

  • ¼ teaspoon baking soda

  • ¼ teaspoon salt

  • 1 teaspoon vanilla

Preparation

  • Preheat oven to 350° F.

  • Beat egg yolks and honey.

  • Beat egg whites until stiff peaks appear, then add to the yolk-honey mixture.

  • Stir in flour, baking powder, baking soda and vanilla.

  • Mix gently, just until batter is smooth.

  • Pour batter into two 9 x 12 inch baking pans.

  • Bake for about 15 minutes.

  • Let cool.

  • Invert cake onto a damp tea towel and spread with a jelly or jam of your choice.

  • Roll cake up in a towel and let it cool completely.

  • Remove carefully from towel.

  • Whip cream until stiff. Add honey to sweeten.

  • Spread whipped cream mixture over jelly roll.
